Banana Bread
Ingredients
- 1/4 cup vegan milk
- 1/2 tsp apple cider vinegar
- 1/2 cup vegan butter (we use earth balance butter sticks)
- 1 cup brown sugar
- 3 ripe medium bananas (2 large also seems to work well)
- 1 tsp vanilla
- 1 1/2 cup flour
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup walnuts; chopped
Preparation
- Mix milk and vinegar in a small bowl; set aside
- Mix remaining wet ingredients in a large bowl, then add milk/vinegar mixture
- Mix dry ingredients in a separate bowl
- Mix dry ingredients into wet ingredients
- Add walnuts
- Add batter to loaf pan
- Bake at 350F for one hour
- Cool for 10 minutes; flip onto cooling rack
Variations
- Add 1/2 cup of dark chocolate chips
Notes
The original recipe calls for baking for 45 minutes; in our oven that comes out underdone in the middle. One hour seems to do it, though that was with a lot of checking, so with the oven closed the entire time it could be less.
