Crackers
Ingredients
Dough
- 3/4 cup (90g) all-purpose flour
- 3/4 cup (90g) whole wheat flour
- 1/2 tsp (3g) salt
- 6 tbsp (88g) water
- 2 tbsp (29g) olive oil
Topping
- 3/8 tsp salt
- 1/2 tbsp olive oil
- 1/2 tbsp thyme (or rosemary)
Preparation
- Mix together flours and salt
- Gradually mix in water and olive oil
- Divide dough into two portions

Flatten one portion of dough, run it through pasta maker at
1. Hamburger fold; rotate 90 degrees. Repeat 4 times.

Run through the pasta maker at 2, and then at 3. If sheet of
dough gets too long, cut it in half and run both halves
through.
- Cut into 1 inch squares; place onto baking sheet

Brush with olive oil, then sprinkle on some of the topping
salt + thyme (or rosemary).
- Bake for 15 minutes
- Repeat with other batch
