Crazy Cake
Ingredients
- 1.5 cups whole wheat pastry flour
- 1/2 cup maple syrup
- 1/2 tsp salt
- 1 tsp baking soda
- 1/4 cup cocoa powder
- 6 tbsp coconut oil
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup cold water
- 1/2 cup of chocolate chips
Preparation
- Mix dry ingredients
- Make three wells, add one of melted coconut oil, vinegar, and vanilla to each well
- Mix quickly; add cold water and maple syrup and fully mix
- Fold in chocolate chips
- Bake at 350 for 35 minutes in an 8.5 x 6.5 pan

Notes
This is a half recipe; it makes a small amount of cake good for two people.
The sub of maple syrup for sugar introduces extra liquid, which makes mixing more difficult. Try mixing in the kitchen aid next time.
