Fig Newtons
Ingredients
Dough
- 170g whole wheat pastry flour
- 70g coconut oil
- 1/4 cup honey
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/8 tsp cinnamon
- 1 tbsp orange juice
- 1 tbsp flax meal + 3 tbsp water for flax egg
Filling
- 170g dried figs
- 50g apple
- 15g orange juice
Preparation
- Add dough ingredients to stand mixer; mix
- Form dough into a ball; chill
- Add filling ingredients to food processor; blend
- Roll out dough on baking pan; cut into two long strips
- Add a line of filling to center of strips
- Form dough into a tube around filling
- Bake at 350F for 18 minutes
- Cut rolls into fig newtons

Pack newtons into a container with layers separated by paper
towels before they cool (the condensation will soften up the
cookie)
