Granola
Ingredients
- 3 cups oats (rolled/old-fashioned)
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- 1/3 cup honey
- 1/4 cup olive oil
- 1 tsp vanilla extract
- 1/2 cup seeds or nuts (have tried chopped almonds and pumpkin)
- 1/2 cup dried fruit (original recipe is craisins; raisins work too)
Preparation

Mix all ingredients except dried fruit (recipe says not to add
seeds yet, for pumpkin seeds adding them at the beginning was
good)
- Spread onto parchement paper in baking pan
- Bake at 300F for 20 minutes
- Stir; bake for 10 more minutes
- Mix in fruit; stir
- Let cool (when pan was cool enough to touch it seemed good)
Variations
- Add 1/3 cup of shredded coconut for the second baking
- Sub goji berries for raisins
