Green Chili
Ingredients
- 1 cup dried pinto beans
- 1 15.5oz can hominy
- 8 tomatillos
- 1/2 onion
- 2 serranos
- 4 cloves garlic
- 2 tsp cumin
- 1 tsp salt
Preparation
- Cook pinto beans in crock pot
- Peel tomatillos; halve serranos; coat both in oil

Roast tomatillos, serranos, and garlic in toater oven at 400F
for 10 minutes

Blend tomatillos and serranos

Peel and coarsely chop garlic
- Saute onions in olive oil in dutch oven
- Add cumin
- Add pinto beans; hominy
- Add garlic, salt, and blended tomatillos
