Ingredients

• Yukon gold potatoes
• High smoke point oil (avocado oil works well)

Preparation

• Dice potatoes
• Bring water to boil in a saucepot; boil potatoes for 3 minutes
• Drain water; let potatoes cool
• Add just enough avocado oil to cast iron pan to coat the entire pan; put it on medium heat. Allow the pan to fully heat up.
• Add potatoes to pan
• The potatoes might stick at the beginning. Do not stir them, if you let them be they will unstick.
• Cook potatoes until they are as browned as you want
