Horchata
Ingredients
- 1 cup long-grain rice; rinsed
- 6 cups water
- 2 cups nut milk
- 1 cinnamon stick
- 1/4 cup sugar
- Ground cinnamon for garnish
Preparation
- Put a little water in a bowl; microwave until boiling; place cinnamon stick in for 10 minutes to soften.
- Add rice and 4 cups of water to blender; add broken up cinnamon stick.
- Coarsely blend.
- Transfer mixture to bowl; add 2 cups water; let sit for 8 hours.
- Transfer back to blender; blend.
- Strain through nut milk bag back into bowl.
- Add sugar; 2 cups milk; stir.

Notes
Next time probably halve the recipe to make 4 cups total. Sweetness level was good, but try substituting honey for sugar. Can the milk be left out?
