Pancakes
Ingredients
- 2 cups flour
- 1 Tbsp baking powder
- 1 tsp salt, scant
- 1/4 cup coconut oil
- 1 3/4 cup vegan milk
- 1/2 tsp vanilla
Preparation
- In a large bowl, mix together flour, baking powder, and salt
- Cut in the coconut oil until the mixture resembles a coarse meal
- Add milk and vanilla and whisk until smooth
- Add any mix-ins like fruit or chocolate chips
- Heat a skillet pan on low (we use 3) with a little coconut oil
- Pour 1/3 cup batter and heat until the edges start to dry and bubbles form
- Flip and cook the other side

The original recipe calls for 2 Tbsp sugar, which we typically omit when adding fruit or other mix-ins.
