Simple Bread
Ingredients
- 3 1/2 cups bread flour (420g)
- 1 cup whole wheat flour (120g)
- 1 tablespoon (11g) granulated sugar
- 2 1/4 tsp instant yeast (7g; 1 packet)
- 2 1/2 tsp (15g) salt
- 1 2/3 cups (379g) water; lukewarm (110F)
- cornmeal for coating pan
Preparation
- Mix ingredients (except cornmeal) into bowl
- Knead
- Let rise 1-2 hours (until doubled in size) (reuse bowl; grease)
- Split into 2 pieces; make loaves
- Spread parchment paper on baking pan; sprinkle cornmeal where loaves will be placed
- Place loaves on baking pan, cover, and let loaves rise for 45 minutes
- Dust loaves with flower
- Make 3-4 cuts in each loaf
- Bake 20 minutes at 450F
- Turn off oven; crack door; allow bread to remain inside for 5 minutes
- Cool
Variations
- A variant that makes one bread loaf (always use the above
whole wheat variant in combination with this):
- Flatten dough into a square the length of a bread pan
- Roll up dough into a cylinder
- Place into pan, cover, and let rise for the normal amount of time. (We use the Great Jones breadwinner, so no need to grease the pan.)
- Bake for 30 minutes
Notes
We cover the bread using Bee's wrap while rising, and then also wrap it in Bee's wrap after baked to keep it fresh (or freeze it for loaves that we aren't going to eat immediately).
