Tomato Gazpacho
Ingredients
- 4 medium tomatos (TODO: get a weight)
- 2 persian cucumbers
- 6 fresh basil leaves
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 3/4 tsp salt
Preparation
- Quarter tomatoes, roughly slice cucumbers
- Add all ingredients to blender
- Lightly blend (I just pulsed a bit)
- Let sit for 2 hours in the refrigerator

This will only be good if the tomatoes are good. Use something nice like heirloom.
