Tomato Soup
Ingredients
- 1/2 medium/large onion
- 3 tbsp olive oil
- 1 tsp salt
- 1 28oz can tomatoes (or 2 14.5oz cans)
- 1 cup vegetable broth
- 1/4 tsp black pepper
- 1/2 tsp dried basil (or 3/2 tsp fresh basil)
- 1/3 cup Oatly barista blend milk
- 1/4 tsp crushed red pepper flakes
Preparation
- Quarter onion; add onion olive oil and salt to blender and select "saute"
- Add remaining ingredeints; select "smooth soup"

Notes
While easily adaptable, as written the recipe assumes use of our blender.
The barista blend has an acidity regulator which prevents it from breaking up in the soup.
We've halved the salt from the original recipe; this makes about 4 servings, bring the salt down to a more reasonable 1/4 tsp.
